Baked Rosemary Lemon Salmon

Wild Keta Salmon



I love fish. Especially during the summer months when I am more body conscious. To my delight I was in a grocery store I usually don't shop at and stumbled into this whole Fresh Wild Keta Salmon for .99 per pound! Nearly 3 pounds for under $3.00. I had to buy. I wish I would have bought more to freeze.

When I find a manager's special like this, I make sure to wash, clean and smell to assure that it is fresh. I wanted to keep the skin, so I descaled the skin even though it was gutted and descaled, I found more scales. SEE VIDEO CLEANING . After padding dry I seasoned with Himalayan Pink Salt, Ground Black Pepper, Ancho Chile Pepper, Ground Nutmeg, Ground Cinnamon and Chimichurri Seasoning and I stuffed the inside with fresh rosemary and lemon inside. SEE VIDEO SEASONINGS and the liquid rub SEE RUB INGREDIENTS


I slathered the rub all on the outside and put in a 400 degree oven for about 15 minutes.

Rosemary Lemon Rubbed Salmon



It was so delish. I wanted crispy skin, so I put under the broiler for a few minutes, but still no crispy skin. The skin was well favored and not too soft but definitely not crispy.


I simply steamed brocolli and made a great butter dipping sauce. I steamed the butter to melt so it adds mostiure. I added olive oil, sea salt and juice from 2 lemons. This sauce is so easy and goes with everything. I dipped both the brocolli and salmon in the delish butter sauce! VIEW VIDEO DIPPING

Once I cut out 1 serving, I discovered there were 6 servings not 4. So the cost of this meal is $1 per serving.
