Roasted Aubergines - Happy Thursday Beautiful People. I try to roast a panful of eggplant weekly. I like them hot from the oven with a light sprinkle of Fleur De Sel Flakes. Or even cold, spread on toast with goat cheese is delish. In the 1st photo, I quickly roasted tomatoes and made an easy Ratatouille with the leftover Aubergines and topped with goat cheese and aged Balsamic Vinegar!
